1697 Grillo

Powerful, fresh, distinct. As soon as this pure Grillo wine is tasted it is unveiled 'cause the variety is rightly considered the finest one of western Sicily. The vineyards are cultivated with a traditional guyot training system allow us to have a limited production per vine. Using soft crush it’s ensured the keeping of aromas and the natural acidity of the must. The following fermentation highlights its varietal character. Grillo 1697 is characterized by an elegant bouquet of yellow pulped fruit plus subtle hints of tropical fruits. The great aromas and finesse make it a relevant white wine of excellent versatility.

Hand-picked in 10-15 kg crates, in September second to third week.

Vinification

After harvesting the grapes are quickly processed in order to maintain the unique features of the fruit. The wine must undergo static clarification at 12°C for 24 hours and it’s subsequently fermented, so as to preserve the varietal characteristics.

Suggests

Ideally served with rich aperitifs of crostini garnished with fried vegetables. It matches perfectly with appetizers, first or main courses fish-based. It also pairs with white meat and sautéed vegetables. Highly recommended to serve it between 8° and 10° C.

Enticing scents of citrus fruit and white-blossom that resemble the Sicilian countryside, alongside notes of yellow peach and white melon developing on delightful nuances of sage and wild mint.

Fruity and savory too on the palate. The mouthfeel is perfectly balanced, with excellent acidity that provides freshness and harmony.
